Thumbs way up: Raw almond milk
Another current favorite at my house is raw almond milk. It's made from raw, soaked almonds, water, vanilla and a pinch of sea salt. I've posted a video on how to make this yourself using a Vita-Mix. (Click here to see the video.)
Raw almond milk is both delicious and nutritious. While it doesn't have the protein content of animal milk, it's rich in plant-based fats and various anti-cancer phytonutrients. |

They are starting with the word, "raw," which the almond Board insists should now mean heating almonds to a high temperature for a duration sufficient to kill virtually all microorganisms that might be hitching a ride on the almonds. This concept was formally known to rational people as "pasteurization," but will now be called "raw" according to USDA regulations. |

Cauliflower and almond Slices (Serves 2-3)
1 head of cauliflower, cut into very small florets 1-2 tablespoons melted butter 1 tablespoon coconut oil Va cup almond slices
Steam the cauliflower for about 8 minutes. Transfer the cauliflower to a large bowl with a tight-fitting lid. Add the butter, coconut oil, and almond slices; cover the bowl and shake it to mix the ingredients.
Optional: While steaming the cauliflower, toast the almonds in a hot but dry frying pan. |

A total of six studies showed the resounding results of the almond's ability to lower total and LDL cholesterol and reduce the risk of heart disease by 10 percent. All it takes is to eat one small handful of almonds (1 ounce) a day. It is best to remove the skin by putting the almonds into boiled water for a few minutes. Many commercial tahinis and almond butters involve exposure to intense heat in the grinding process. Thus, their labels, which identify them as "raw," are very misleading. This attack on raw milk is dressed up to look like a public safety concern. Raw milk is dangerous, regulators claim, because the live cultures might get contaminated with unfriendly bacteria and harm someone. The preferred alternative, it seems, is to kill all the food so that it harms everyone equally.
